Chocolate blanco con menta / White chocolate mint fudge

November 28, 2012 by Lizet Flores de Bowen Leave a Comment

A few weeks ago, a friend gave me some mint extract that she had brought from Bolivia. I promised her I would do something with it soon and the easiest thing to make was this recipe.
If you do not have any mint extract and want to make something easy and delicious without turning on the oven, see the Christmas fudge recipe that uses cherries, and try that.

1 lata de leche condensada
3 ½ paquetes de chocolate blanco ARCOR
2 cucharas de manteca
1 cucharita de vainilla
1/2 cucharita de esencia de menta
1 can (14 ounces) sweetened condensed milk
3 cups white chocolate chips or 3 1/2 ARCOR packages
2 Tbsps. butter
1 teaspoon vanilla

O derretirlo a baño María.
Put all ingredients, except the mint extract, in a microwavable dish and put in for 30 seconds. Remove and mix. If the chocolate is still hard, put it for another 30 seconds until chocolate melts. Or melt in a double boiler.
Remove from microwave and pour three quaters of the chocolate into a pan covered in foil. Add the mint extract to the rest of the chocolate and if desired add a few drops of food coloring (my mint extract was green, but some come transparent).
Pour it on top of the white chocolate. Chill until firm, about 3 hours, before cutting.
