Raspberry Orange Panna Cotta

This raspberry panna cotta is so creamy and refreshing. Perfect for Valentine´s Day.

Ingredients

First layer

  • 1-3 / 4 cup cream
  • ¼ cup raspberry jam
  • ½ tablespoon orange zest
  • ½ teaspoon of unflavored gelatin
  • 1 tablespoon of water at room temperature

Second layer

  • 2 tablespoons raspberry jello
  • 2 tablespoons of raspberry jam
  • ¼ cup hot water
  • ¼ cup cold water

Instructions

  • In a small bowl, add unflavored gelatin with a spoon of water. Dissolve and let stand for 5 minutes.
  • In a small saucepan add the cream, gelatin, marmalade and orange peel. Heat for about 5 minutes over low heat, do not boil. Pour the mixture in two glasses and store in the refrigerator for 1 to 2 hours. (If you wish, you can strain the mixture before pouring it into the glasses)
  • For the second layer, add the raspberry jello into a small bowl. Add the hot water and mix well. Add the marmalade and the rest of the water and mix. Divide the jello into the two glasses over the panna cotta. Keep it in the fridge for onother hour.
  • If desired, serve with a bit of whipped cream and a raspberry.

Notes

This panna cotta keeps well in the fridge for up to 4 days.
