Orange Muffins

These orange muffins have crisp edges and are so light! they pair well with a cup of coffee too.

Ingredients

  • 3/4 cup oil or butter soften
  • 1 cup sugar
  • 4 eggs
  • 3/4 cup orange juice
  • 2 Tablespoon orange zest
  • 2 to 3 teaspoons orange extract or more orange juice
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. In a bowl add the flour, sugar, baking powder, orange zest and salt.
  2. In another bowl beat in the oil or butter, orange juice and eggs, vanilla and orange extract if using.
  3. Add the liquid batter to the flour and mix well. Don´t mix it up too much, just until moisten.
  4. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350°F / 180°C for 20-25 minutes or until golden.
  5. Cool for 5 minutes before removing from pans.

Recipe Notes

 If you don't have a muffin pan, you can use a cake pan or bundt pan.
