Place the chopped chocolate or chips in a medium bowl.
Heat the cream until just boiling (stovetop or microwave).
Pour the hot cream over the chocolate, making sure it’s fully covered.
Let it sit for 2 minutes without stirring.
Whisk until smooth and glossy. Set aside.
Churros
In a medium saucepan, melt the butter with the water over medium heat.
Lower the heat and add the flour, salt, cinnamon, and sugar.
Stir constantly with a wooden spoon until the dough forms a smooth ball, about 40–70 seconds. Do not let it burn.
Remove from heat and let cool slightly.
Add the eggs, mix well until the dough is smooth and thick.
Transfer the dough to a piping bag fitted with a star tip.
Pipe churros onto a greased parchment paper, cutting with scissors.
Freeze for 15 minutes.
Air fry at 400°F (200°C) for 10 minutes.
While hot, roll in cinnamon sugar and enjoy.
Notes
Every air fryer is a little different. I recommend starting with one test churro first. If it cooks too fast, check again at 6 or 8 minutes and adjust the time or temperature as needed.
