This salad has a lot going on. Sweet, crunchy and a touch of spicy. Great salad for this summer.

Ingredients
Salad:

cups
torn lettuce

cup
chopped mango
¼
cup
diced cucumber
¼
cup
diced avocado
¼
cup
diced red pepper
¼
cup
cashews
Spicy mango dressing:
¼
cup
vegetable oil
¼
cup
vinegar
I used apple
¼
cup
orange juice
¼
cup
chopped mango
¼
teaspoon
of salt
¼
teaspoon
ground black pepper
2
tablespoons chopped cilantro
2
cloves
garlic
2
small chilies,
if desired
Instructions
For the salad, mix all the ingredients and serve.
For the dressing, add all ingredients to the blender and blend for 2 minutes. Serve with the salad.
