Ingredients

  • 3-½ cups Old-Fashioned Oats
  • ¾ cup brown sugar
  • ½ teaspoon salt
  • 2-½ teaspoons baking powder
  • 2 eggs
  • 1-½ cup milk
  • ¾ cup applesauce
  • 3 cups frozen berries

Instructions

  • Preheat oven to 350°F / 176°C. Grease an 8x8 baking dish.
  • In a large bowl add oats, brown sugar, salt, baking powder.
  • In a small bowl, mix applesauce, eggs and milk. Add the mixture to the oats and mix well. Add frozen berries.
  • Pour batter into a greased baking dish and bake for one hour, or until the center is firm to the touch.
  • Serve hot with a splash of milk.

Notes

Once cooled, this baked oatmeal can be frozen for up to 3 months.
Substitutions: 
  • whole milk: non-dairy milk, fat free milk
  • brown sugar: granulated sugar, artificial sweeteners, honey, maple syrup
