Galletitas de coco y cerezas / Macaroon kisses

November 14, 2012 by Lizet Flores de Bowen Leave a Comment

I like coconut and almonds. These cookies have both, and with the cherries on top, they are just excellent.

1/3 cup butter, softened
1 package (3 ounces) of cream cheese, softened
3/4 cup of sugar®
1 egg yolk
1-1/2 teaspoons of almond extract
2 teaspoons of orange juice
1-1/4 cups of all-purpose flour
2 teaspoons of baking powder
1/4 teaspoon of salt
5 cups of coconut, divided
Candied cherries
In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in the egg yolk, extract and juice. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in 3 cups of coconut. Cover and chill for at least 1 hour.
Salen unas 4 docenas.
Shape into 1-in. balls; roll in remaining coconut. Place 2 in. apart on ungreased baking sheets. Bake at 350°F / 180°C for 10-12 minutes or until lightly browned. Immediately place a cherry on top of each cookie. Cool 5 minutes; remove to a wire rack to cool completely. Yield: about 4 dozen.
