I published this recipe on my old blog 6 years ago. Our bushes are full of raspberries right now, so I thought it was time to update this recipe. This is the best dessert in the whole world! It has a combination of crunchy, creamy, fresh, and something that tells you: Eat more!
The first time I served this raspberry pie, 6 years ago, we had some friends over for dinner. After a few bites, I realized that there was total silence. I looked up and saw that everyone was eating slowly and trying to make those delicious flavors last longer. Yes, that's how amazing this pie is.
The ingredients are very simple.Pie base:
For this pie we're using crushed cookies, a bit of sugar and some butter. If you want, you can bake it for 5 to 7 minutes, or just put it in the freezer for about 15 minutes. I have also made it with homemade pie crust. You can use the one you like the most.Filling for raspberry pie:
The filling has cream cheese (the Philadelphia kind, for the ones outside the US) . It is creamy, but firm. If you live in Paraguay, I used the brand Polenghi, Tradicional Cream Cheese. When I can't find that brand, I use any spreadable cheese. This recipe uses white chocolate. We only get white chocolate bars, but if you can find white chocolate chips, use that instead. If you are using chocolate bar, cut it into small pieces so it can melt evenly. White chocolate tends to burn very fast. Keep an eye on it. Finally you need to mix some whipped cream with the cream cheese mixture. When you're beating the cream, just beat it until it starts to thicken, not until it's firm. It will firm as you mix it with the cream cheese mixture.Other ingredients:
Since it's a raspberry pie, we need a few cups of raspberries. The recipe says 3 cups, but I like to add 4 or more. I leave it to your liking. You can use fresh or frozen raspberries. If you use the frozen ones, add them right before serving. Melt a little more white chocolate and drizzle it over the raspberries. White Chocolate - Raspberry Pie
Ingredients
Base:
- 1-¼ cup crushed cookies, I use "butter cookies", Costa brand (125g)
- ⅓ cup butter melted (75.6g)
- ¼ cup sugar (50g)
Filling:
- 1 cup white chocolate, cut into small pieces (175g)
- 3 tablespoons milk
- ⅔ cup cream cheese (150g)
- ½ cup icing sugar (62.5g)
- 1 teaspoon orange zest
- ½ cup whipping cream (120g)
Topping:
- 3 cups raspberries (375g)
- ¼ cup white chocolate (45g)
Instructions
For the base:
- In a large bowl add crushed cookies, sugar and melted butter. Mix well with a spoon. Add the mixture to a pie plate. Press it on the sides and on the base of the plate. Keep it in the freezer while you prepare the rest.
For the filling:
- Melt chocolate in the microwave for about 2 minutes, stirring every 30 seconds; or use the water bath method. Let it cool.
- In a large bowl, beat cream cheese, icing sugar, milk and orange peel. Add melted chocolate and mix.
- In a small bowl, beat cream with an electric mixer for 2 to 4 minutes. It does not have to be firm, only creamy. Mix the whipped cream to the cream cheese mixture with a spatula.
- Pour the filling over the crust. Allow to cool for 2 hours or overnight in the refrigerator.
Topping:
- Before serving melt ¼ cup of chocolate in the microwave for 1 minute, stopping after the first 30 seconds; stir and keep melting. Let it cool.
- Add raspberries to the pie. In a plastic bag place white chocolate, cut the tip (just a little bit) and drizzle over the raspberries.
