Spicy Chocolate Covered Bacon

Sweet, salty and with a kick of cayenne pepper. What a wonderful way to say I love this Valentine's Day.

Wow, wow, wow! Bancon, chocolate and a hint of spice.

Do you like trying new foods? I know this combination of meat and chocolate wouldn't go well with many of my South American friends.

So, I hope you guys give it a try.

I've been making this chocolate-covered bacon for a few years now.

My husband is a language teacher in Paraguay and as a welcome to school, I make these little beauties. Everybody loves them.

I started making it for Valentine's Day, as I knew my husband would enjoy it better than a plate of heart-shaped cookies.

As I mentioned before, I've made this dessert many times in Paraguay. The store I go to, it only has one brand of bacon and no other options.

Our bacon in Paraguay it's a thinner cut and crumbles easily.

I'm updating this post in the US, and there are way too many options and brands to choose from.

This time I used the thick slices. I thought it would be easier to dip them in chocolate without worrying about crumbling in the process.

Making Spicy Chocolate Covered Bacon

To make this amazing Valentine's gift, start by baking the bacon.

The first time I made it, I cooked it on the stove, but it shrunk too much. The second time I baked them, they kept their shape better. So, I just stick to this method.

After baking, it's time to melt some chocolate.

Although I usually prefer milk chocolate over dark chocolate, with this recipe I really recommend using semi-sweet or dark chocolate.

The bacon highlights the sweetness in the chocolate, the chili takes it to another level. It's not really spicy but adds a special touch to this, already amazing snack.

Spicy Chocolate Covered Bacon

Crunchy, sweet and spicy, a delicious combination.

Ingredients

  • 8.7 oz / 247 g bacon (about 13 slices)
  • 5 oz / 150 g semi-sweet chocolate (or use half milk and half semi-sweet chocolate
  • chili powder (I used cayenne)
  • about ½ oz / 10 g white chocolate, if desired

Instructions

  • Preheat oven to 400F / 204C.
    Covered a cookie sheet with foil. Place bacon on a cookie sheet and bake for 20 to 25 minutes. Drain on paper towels.
  • Melt the chocolate. You can do it in the microwave: Place the chocolate in a bowl and put it in the microwave. Heat it for 30 seconds, remove from the microwave and stir. Repeat heating for another 30 seconds, until the chocolate is completely melted and has a smooth consistency. Water bath method: heat a small pot with several inches of water, cover the top with a tightly fitting, heat-proof bowl. Make sure that the steam cannot escape. Also, check to make sure the surface of the water does not touch the bottom of the bowl. Allow the chocolate to melt in the bowl, stirring occasionally, until it is completely melted. Remove from the heat and stir to make sure it's a smooth consistency.
  • Cover your surface with wax paper. Using a knife or a spatula (in a video I saw somebody using a paintbrush) coat each side of the bacon with chocolate. Sprinkle some chili pepper. If desired, melt some white chocolate and drizzled over the chocolate-covered bacon. Transfer to refrigerator until white chocolate has set, about 20 minutes.

Notes

Keep in the refrigerator in a air-tight container for up to 5 days.
If using thinner slices of bacon, bake for 10 minutes and check for doneness.
